Starch (Tapioca Flour)
Tapioca
is the starch of the cassava root. Tapioca can be used the same as corn
starch. It is a natural thickening agent.

Tapioca Large Pearls
Natural pearl tapioca, soak for 10 hours prior to cooking. Used in old
fashioned tapioca pudding and in bubble tea.
Order Large Pearl Tapioca.

Tapioca pudding Microwave recipe:
Use a two quart oven ware baking dish with a lid.
Place 3 tablespoons of tapioca in 2 cups of warm milk.
Put in up to three heaping tablespoons of white or brown sugar.
Stir enough to dissolve sugar.
Cover and leave at room temperature for
around 10 hours (5 hours if using minute tapioca).
Remove cover and place in a 800 watt microwave carrousel oven cook on high for 25 minutes.
OR
In a 1000 watt microwave carrousel oven cook on 80% for 25 minutes.
Stir in two teaspoons of vanilla
extract thoroughly scraping the sides of the dish.
Place in refrigerator, uncovered, until
thoroughly chilled.
Serve with whipped cream topping and sprinkle
with nutmeg.
Small Pearl Tapioca Pudding
1/2 cup small pearl tapioca presoaked for 1 hour and drained.
3 cups whole milk
1/4 teaspoon salt 2 eggs
1/2 cup of sugar
1/2 teaspoon of vanilla
Mix tapioca, milk, and salt in 2 quart pan on medium high heat.
Stir always and simmer 5 minutes, adding sugar gradually. Beat eggs and mix in
hot tapioca very slowly to equalize temperature. Mix eggs into tapioca bringing
to a simmering boil for 3 minutes or more to thicken, stirring always. Cool 15
minutes. Add vanilla and options: 1/2 cup walnuts or 1/2 cup drained pineapple
and/or cover with whipped cream with a dash of nutmeg. Serve warm or chill.
Old Fashioned Large Pearl Tapioca Pudding
1 cup large pearl tapioca
4 cups water
3 cups brown sugar
1/2 tsp salt
1 1/2 teaspoons vanilla extract
Place the tapioca salt and water in a crock pot.
Soak overnight then add brown sugar and cook on low for 12 hours stirring
occasionally.
Let cool and add vanilla and options: Add 1 cup English walnuts or 1 cup of
drained pineapple and/or cover with
whipped cream topping with a dash of nutmeg.
Quick Minute Tapioca Pudding
2-3/4 cups 2% milk 1/3 cup sugar
3 Tbsp. Minute Tapioca or (10 hour presoaked and drained small
or large pearl tapioca)
1 egg 1 tsp. vanilla
Mix milk, sugar, tapioca, egg in medium saucepan. Set 5 min.
Cook medium heat until full boil, stirring always. Take off heat. Cool 20 min. Stir in
vanilla and options 1/4 cup walnuts or 1/4 cup drained pineapple and/or cover
with whipped cream with a dash of nutmeg. Serve warm or chilled. Tapioca is thicker when
cooled.
