What can you do when you don't have or can't use one of the ingredients in
a recipe?
We offer these as helpful suggestions as possible replacements when cooking,
please note however that substitutions may not live up to your expectations
depending upon the use. Many people need to substitute due to allergies etc. therefore
this list.
Butter or Margarine = Vegetable Oil (15% less)
with a little salt.
Chocolate 1 ounce = Cocoa powder 3 tbsp and 1 tsp oil.
Cocoa powder = Carob powder.
Corn Starch = Tapioca starch (Tapioca
flour), Potato starch, Rice flour, or any combination.
Corn Starch = Wheat flour doubled.
Dried Fruit = Most any other Dried fruit.
Dry Milk = Lacto-free OR Instant Dry Milk.
Eggs are difficult to replace however you may try:
When using eggs for a binder = nut butter or garbanzo flour or soy flour or oat
flour or any combination.
Fats (solid) = Coconut oil.
Honey = Honey Powder
Lemon Juice = Mix 1/3 Ascorbic acid (Vitamin C) with 2/3 Water.
Molasses = Molasses Powder
Nuts = Most any other Nut however the black walnut has its own high flavor
profile.
Potato starch is potato starch flour, it is very fine white powder that is excellent for baking when combined with other flours. Potato flour
is not and cannot
be substituted for potato starch flour.
Rice flour = Potato starch.
Sour Milk = Mix 1 cup milk with 2 tsp lemon juice or 1 tsp ascorbic
acid (Vitamin C) or 3/4 tsp cream
of tartar.
Sugar = Brown sugar. Brown sugar is sugar with a little molasses
added.
Sugar = Corn Syrup reduce the
liquid by 1/3 the amount of syrup used (half as sweet).
Sugar = Dextrose equal quantity
(will be about 2/3 as sweet).
Sugar = Fructose equal quantity (will be 1/3
sweeter).
Sugar = 1/2 Dextrose and 1/2 Fructose.
Sugar = Honey but
reduce the liquid by 1/4 of the amount of honey added (will be 25% sweeter).
Sugar = Our honey powder. Our
Honey Powder is 70% Honey. Many Companies have a honey powder which is sugar
with 10% Honey.
Sugar = Maple syrup reduce the water by 1/2 of the
amount of syrup added.
Sugar = Maltitol will be 10% less sweet.
Sugar = Molasses but
reduce the water by 1/4 of the amount of molasses added (not as sweet).
Sugar = Molasses Powder. Same sweetness level.
Sugar = Xylitol a direct 1 to 1 replacement for sugar.
Tofu =Ricotta cheese.
Vegetable oil = Canola oil, Corn oil,
Soy oil, Soybean oil, or any combination.
Vinegar = Apple cider vinegar or lemon juice or grapefruit juice.
Vinegar = Mix 1/3 Ascorbic acid (Vitamin C)
with 2/3 Water.
White Vinegar (Distilled) = Apple Cider Vinegar.
White Rice = Brown Rice.
White Rice = Wild rice (wild rice is a grass seed but cooks like
rice). You may replace 10 to 20% of the white rice for a great taste.
Dry baby formulas, such as Isomil, Prosobee, and Pregestimil, may be used in place of dry milk for soy and lacto intolerance. Use
1/3 cup to replace ½ cup dry milk.
Egg Replacer can replace eggs. To substitute for 3 eggs, use 4 tablespoons dry egg replacer, mixing with the dry ingredients. Use a total of 2 cups water with
the wet ingredients. Check dough consistency, adding more water if necessary.
