What are MERCKENS Melting Wafers?

MERCKENS Melting Wafers: are compound coatings made with fractionated fats instead of cocoa butter fat as in real chocolate. Their melting profile is very similar to real chocolate, but they do not have the difficult tempering requirements that real chocolate needs.

How to melt MERCKENS melting wafers:

Double Boiler melting methods:

A.  Heat water in bottom pan until it boils. Remove from heat. Place the MERCKENS wafers in the top half. When the MERCKENS wafers start to melt, stir until melted.

B.  Heat water in bottom pan without boiling, hot to touch but not burning. Place wafers in the top pan and stir frequently until melted.

Microwave melting method: Place MERCKENS wafers in a microwaveable plastic container with medium or defrost setting. After 1 minute stir every 30 seconds until smooth. As microwave heats vary the best heating time will vary.  Melting slowly will produce the best results.

Chocolate Fountain Method: Follow the directions with the fountain for placement of the MERCKENS wafers in the fountain. A very easy melting method for MERCKENS wafers.

Heating too hot or getting moisture in the coating will make it difficult or impossible to melt.

MERCKENS wafers are delicious as is and can be used as edible candy decorations or as candy party favors.
